We are Dreaming of Spring and Summer

Watermelon Mint Lemonade

Ingredients:

½ cup white sugar
½ cup water
1 sm bundle of fresh mint
4 cups cubed watermelon
3 cups cold water
½ cup fresh lemon juice

Directions:

1. Place watermelon into blender. Cover and puree until smooth. Strain through a fine mesh sieve.

2. Bring sugar and ½ cup water and mint to a boil in a saucepan over medium high heat until sugar dissolves, about 5 minutes.

3. Remove from heat and cool. Remove mint.

4. Stir in a pitcher, simple syrup, 3 cups of cold water, and the lemon juice.

5. Pour 2 to 3 tablespoons of watermelon puree into the bottom of a glass, then top with lemonade. (Optional: add ice.) Gently stir before serving.
